Yummy Chocolate Mint Cookies

As many of you know, I am a sucker for recipes. So when I find a good one, I like to share, in hopes that you will all share your good ones with me. Anyway, we made these cookies today and they are great for Christmas time. Enjoy!!

Chewy Chocolate Cookies

1 1/4 c. softened butter
2 c. sugar
Cream together, add:
2 eggs
2 tsp. vanilla
Slowly add:
2 c. flour
3/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt

Drop by spoonfuls on an ungreased cookie sheet. Bake for 8-10 minutes at 350 degrees.

These are great just plain with powdered sugar dusted on top, or for Christmas add 3/4 bag of mint chips. (Guitarrd green mint chips are YUMMY!)

I have been meaning to post some new recipes for a while, but I worry that no one is interested. But you are like me-- I LOVE recipes on blogs (because that means people have actually tried them!)-- so I'll have to do it.
