Try-It-Tuesday

Holy Bananas! Is it REALLY Tuesday again? Where in the world is this summer going?!

Today's recipe is absolutely one of my family's favorites. My little Halle was a vegetarian for the first part of her life. This was the only way I could get her to eat meat. She would even request this meal. (Of course we didn't tell her it was meat until much later in her life.)

Chicken Poppy Seed Casserole

6 chicken breasts cooked and shredded
2 cans cream of chicken soup
½ c. melted margarine
12 oz. sour cream

Place shredded chicken in a 9x13 dish. Mix remaining ingredients and pour over chicken. Spoon topping mixture over top. Bake 350 for 30 minutes.

Topping mix together:
2 rolls crushed Ritz
½ c. melted margarine
1 T. poppy seeds

*We love the topping so much, I actually use a little more butter and a 3rd roll of the Ritz crackers.

We like to serve a spinach salad w/strawberry vinaigrette, rolls, and a fruit salad on the side. Mmmmmm.....goodness.

I remember when Halle' was a vegetarian! That was funny :)!

This sounds super yummy. And butter, sour cream, Ritz crackers---all HEALTHY :)!!!

My recipe is for cute swedish fish lollipops. I left it over on Emily's blog! HA!

oh, yeah! i remember this recipe and it is oh so good! and if you pair it with something green, you don't feel quite so bad about all the butter and sour cream... :)

Hey, I never said it was healthy Tues. :) I'll bet you could omit the butter in the sauce mix, and I always use low fat sour cream, but the topping butter's got to stay.

Lisa- I loved them. So did Jarom. I will definitly make them again, although I think I'll use a little less balamic. I used the full 1/2 c, and I think I'll only do 1/4 c. next time.

I love this recipe. I usally make two..and stick one in the freezer. And it's a great recipe to take to a new mom...or anytime you need to provide a meal for someone. Or just to have an extra for yourself cause time gets away from you and your cooking plans go to pot...
