Try-It-Tuesday -- Chocolate Mousse

Today's feature comes from "Get Off Your Butt and Bake", one of my most favorite recipe blogs. Man there are so many yummy things there that I want to try!

I'm telling you this chocolate mousse is to die for! It is the perfect thing for those weeks when ONLY chocolate will suffice. (You know... the weeks where you cry at the Olympians winning gold, you lay in your bed and have a pity party because you're not good at anything, not even housekeeping, and all your children have to do is look at you cross eyed to make your blood boil. This may or may not have been me last week, I'm just saying.) Seriously, make this stuff and then just TRY to stay out of it.

Be sure to make both the chocolate part and the vanilla cream part. It's lovely served alone, (I served it in these fun chocolate bowls from Wish Trish's blog) would be delicious in a pie crust or pastry puff, or even frozen as a smooth ice creamy treat.

Heavenly Chocolate Mousse

8 oz chocolate
1/4 c. water
2 Tb. butter
Heat until melted and smooth. Set aside and let cool.

3 egg yolks
2 Tb. sugar
1/4 c. water
In a heavy sauce pan over low heat, whisk above ingredients together until mixture reaches 160 degrees. It only takes about 4-5 minutes. The mixture looks like a thin custard. Remove from heat and whisk into cooled chocolate mixture. Let cool, stirring occasionally.

Whip up a pint of whipping cream (I added some sugar and vanilla to it.) then gently fold into chocolate. Refrigerate at least one hour.

Vanilla Cream
1 small box Vanilla instant pudding
1 1/3 c. cold water
1 can sweetened condensed milk
Mix together with wire whip. Set in fridge to firm up. Then fold in 2 1/2 c. Cool Whip.

Oh man! that looks so good! And, I was thinking,"it's not even that bad for you", then I got to the condensed milk and whipping cream :) Oh well, "those weeks" definitely call for a treat!

Have you ever made her cream puffs?? It uses the same vanilla cream, SOO yummy! I love her recipes. I tried her pizza crust this week, and it was very good too!! Have a fun weekend away, I am a bit jealous:)

Oh my, that blog is EVIL (but a good evil). I'm going to make the pretzel bites this afternoon-they looked so good. So does that choc. mousse, way to go!
