Try-It-Tuesday

Stuffed Bell Peppers

( I do NOT claim to be a professional food photographer. )

6-8 large green bell peppers (dice one up to put in rice mixture.)
1 cup rice
1 lb. hamburger
1/2 c. bell pepper diced
1/2 c. onion diced
one 15 oz. can tomato juice
shredded cheddar cheese
1 package Parma Rosa sauce mix (this gives it a nice rich cheesy flavor)

Cut tops off peppers and remove seeds. Cook rice in chicken broth (I just add chicken bullion to the water). Brown hamburger, season with salt and pepper and 1 tsp. beef bullion granules. Add diced onions and diced peppers, cook until tender. Add packet of parma rosa seasoning, then add cooked rice to hamburger. Pour in tomato juice and add about 1 cup of shredded cheddar cheese. Spoon mixture into hollowed out peppers, top with more shredded cheese. Place filled peppers in 9x13 baking dish and pour 3/4 c. water in bottom of dish. Cover with foil. Bake 400 degrees for 30 min.

I don't like peppers. I don't like anything that has peppers in it. It's like the smell/taste of them permeates everything. Do you know how hard it is to find a lean cuisine without peppers in it? :-)

Kat you crack me up! I swear you are the pickiest eater on the planet. No beans, no onions, no spice, no peppers. I'm keeping track. We'll find a recipe that you'll like someday. :)

We have a recipe pretty close to this one, that has been a family recipe ever since I can remember. Yummy.

There is an entry in my recipe file for "Bell Pepper Mix", because so often kids don't want the bell peppers, but still love the mix inside!

Sounds good!!! I love stuffed onions too but I am alone in my choices. I have the pickiest kids....

No T-I-T for me. But I will work on one for next week. Till then I just get to enjoy what everyone else is making.

MMMmmmmmMMMM! I love green bell peppers. As a matter of fact, I just threw three away this morning because they went bad. DANG. They were only 25 cents a peice the other week. I hope they're cheap again so that I might try this! It really looks good...and I love rice....mmmmmm.
