Try-It-Tuesday

Last week I was too busy reading to do a T-I-T post. Several of you posted recipes anyway (Way to go ladies!) and I wanted to make sure to link to those today.

Stevie- bbq meatloaf

Jewelle- Marci's Spicy Pasta

Lisa- Zucchini Bread

If I missed anyone else let me know and I'll link you.

One reason I do Try-It-Tuesdays is because I love getting fresh ideas and the other reason is because I want to have my own personal favorites typed up and printed in my blurb books. Today's recipe is one I definitely want written on a recipe card, stored in my computer, and printed in a book. It's a keeper for sure. I got this recipe from Jennifer P. several years ago. She has also served it to me using a pork roast and slow cooking all day. (Shredded and served as sandwiches.)

Don't be afraid of the long list of ingredients. I had everything in my kitchen except limes.

Jerk Chicken

2 t. salt

2 t. sugar

2 t. garlic powder

1 t. minced garlic

2 t. allspice

2 t. dried thyme (crushed)

1 1/2 t. sage

1 1/2 t. black pepper

1/2 t. cinnamon

1/2 t. ground nutmeg

1/4 t. red pepper flakes

3/4 c. white vinegar

1/4 c. orange juice

3 T soy sauce

2 T olive oil (I use canola)

Mix all together in a large zip lock bag. Add chicken and marinate in refrigerator for several hours. Grill or fry in skillet with a little oil. Squeeze fresh lime over top and garnish with chopped green onions. REALLY so absolutely delicious. (Especially the fresh lime juice. Mmmmmm.)

We always serve it with Black Beans and Rice as a side dish.

Cook rice in chicken broth (I usually do about 1 1/2 c. for my family) add a can of black beans (drained) and 1 T cumin, 1 t salt, 3 t. minced garlic.

Enjoy! And as always, if you have recipe to share leave the title in the comments and post the recipe on your own blog.

Look at that :)! I participated in T-I-T without even doing anything :)! I do love that jerk chicken recipe. I've tried bottled jerk sauce and it is just NOT the same. Plus, this recipe makes your house smell like Jamaican heaven!

Is it spicy? Cause we are really whimpy here. Except my husband. But he can add his own heat...

Kat, no it's not spicy hot, but very flavorful. All of my kids eat it and Carter hates hot, so I think you could handle it.
